This Halloween, there is no reason to be scared, instead of letting something take a bite out of you, take a bite of these delicious Chocolate Almond Butter Bites.  Don’t worry, this recipe won’t drive you batty, it is so simple.  Please enjoy with all of your favorite ghouls.

 

Chocolate Almond Butter Bites

Ingredients
Bottom Layer
• 2 tbsp Coconut Oil, melted
• ¼ cup Almond Butter
• 1 tsp Vanilla Extract
• ¼ cup Cocoa Powder, unsweetened
• 2 count Stevia, droppers full
Top Layer
• 2 tbsp Coconut Oil, melted
• ¼ cup Almond Butter
• ½ tsp Vanilla Extract
• 1 count Stevia, dropper full

Instructions
1. Combine all ingredients for bottom layer together
2. Pour into molds or cupcake liners
3. Place in freezer approximately 5 minutes
4. Combine all ingredients for top layer together
5. Pour on top of bottom layer
6. Return to freezer approximately 30 minutes
7. Keep Bites stored in the freezer

Ingredients
• 1 – 5.4 oz. can Coconut Cream not Coconut Milk
• ⅔ cup Organic Pumpkin Puree (not pumpkin pie filling)
• 2 Tbsp Real Maple Syrup
• 2 Tbsp Pure Vanilla Extract
• 1 Tbsp Pumpkin Pie Spice
• ¼ tsp Pink Salt

Instructions
1. Combine all ingredients in a high-speed blender (such as a Vita Mix blender) and whirl on high for one minute or until ingredients are completely combined. Serve immediately.
2. Store unused portion in a covered container in the refrigerator (preferably a glass container)

Slow Cooker Pumpkin Chili

Ingredients
• 1 Tbsp Coconut Oil or Olive Oil extra virgin/ unrefined
• 2 Cups chopped yellow onion about 1 large onion
• 1 green pepper diced
• 6 garlic cloves minced
• 1 pound grass-fed beef or bison
• 1 28oz can of diced tomatoes
• 1/2 6oz can tomato paste
• 1 14oz can pumpkin puree
• 1 Cup chicken broth or water
• 2.5 teaspoon dried oregano
• 2 Tbsp. chili powder
• 1 tsp. ground cinnamon
• 1.5 tsp. ground cumin
• 1 tsp. pink salt
• 1/4 tsp. black pepper

Instructions
1. Heat large skillet over medium heat. Add oil and sauté the onions and peppers. About 7 minutes or until onions start to soften.
2. Add the garlic and cook an additional 30 seconds or until fragrant.
3. Add the ground beef/bison. Use a spatula or large spoon to break it up as it cooks. Cook until meat is nearly cooked through.
4. Transfer meat mixture to the slow cooker.
5. Add remaining ingredients and stir.
6. Set heat to LOW and cook for about 6 hours
